So much fun to make during the holidays when everyone is around. Giving everyone a part to play in making these ravioli and it becomes a family holiday classic! Choose different raviolis every year.

ingredients:

  • Use this ratio for creating fresh pasta
  • 3 parts flour, 2 parts egg. Crack 1 egg per serving into a bowl, then multiply that weight by 1.5 and add that much flour -
  • OR the classic
  • 1 cup of flour and two eggs
  • 1 cup ricotta or goats cheese
  • 1/2 cup chopped spinach
  • 3 cloves roasted garlic
  • Salt and pepper to taste

How to cook Homemade Ravioli

For the Roasted Garlic
  1. Place 1 head of garlic in foil, drizzle with olive oil and salt and pepper, wrap up tight and bake at 375 for 45 minutes. Allow to cool before handling.
For the Pasta
  1. In a large pasta bowl, add the flour and a pinch of salt, whisk to combine. Add the egg mixture to the center, and either using your hands, or a fork, start mixing in the flour and eggs together until a dough ball forms.
  2. Knead until you have a smooth dough, cover with plastic wrap and rest for 30 minutes.
  3. After the rest, portion your dough in manageable sizes, and starting with your pasta machine on 0, start running it through, gradually decreasing the thickness until you have reached No. 6 or 7.
  4. Allow the dough to lay flat or hang for 30 minutes before proceeding.
Assembling the Ravioli
  1. Lay your dough sheet on a floured surface, and place a 1.5 teaspoon amount of filling close to the middle, but leave enough space to fold it over upon itself.
  2. Brush the dough with water, then carefully fold it over the filling, trying your best to remove any air bubbles. Cut the shapes out from this point and clamp with a fork, to seal the edges, Set aside on a floured plate.
  3. Bring a large pot of salted water to a boil, then drop the ravioli a few at a time, and cook for 5-6 minutes. Remove to a serving platter with melted butter and herbs.
  4. Sprinkle some grated Parmesan cheese on top and enjoy!
