Shrimp and Orzo with Feta, Dill, and Veggies

A fresh and very quick dinner that can use up some of the odd bits of veggies

Ingredients

  • 1 lb peeled and deveined shrimp
  • 1 cup orzo
  • Vegetable Bits - purple cauliflower, red and yellow peppers
  • 1 bunch fresh dill
  • 2 tsp ghee
  • 2 tsp olive oil
  • Salt and pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/3 cup feta, crumbled

Instructions

  1. Prepare your veggies - cut into small pieces and set aside, chop dill.
  2. Place orzo into a sauce pan with 1 tsp olive oil and brown over medium heat. When it is toasted thoroughly, add roughly 3 cups of water, 1 tsp of salt and boil gently until tender.
  3. While orzo is cooking, place the half the ghee and olive oil into a shallow sauté pan and cook over medium heat until the vegetable pieces have a little color to them. When they are cooked to your liking, remove to a small dish and set aside.
  4. Using the rest of the ghee and olive oil, place the shrimp into the pan, season with the paprika, garlic powder, salt and pepper. Sauté until done.
  5. Drain the orzo, add the fresh dill and feta chunks and the sauteed veggies. Toss to combine, season again if necessary and add your shrimp.
