Shrimp and Orzo with Feta, Dill, and Veggies

Ingredients
- 1 lb. peeled and deveined shrimp
- 1 cup orzo
- Vegetable Bits - purple cauliflower, red and yellow peppers
- 1 bunch fresh dill
- 2 tsp ghee
- 2 tsp olive oil
- Salt and pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/3 cup feta, crumbled
Instructions
- Prepare your veggies - cut into small pieces and set aside, chop dill.
- Place orzo into a sauce pan with 1 tsp olive oil and brown over medium heat. When it is toasted thoroughly, add roughly 3 cups of water, 1 tsp of salt and boil gently until tender.
- While orzo is cooking, place the half the ghee and olive oil into a shallow sauté pan and cook over medium heat until the vegetable pieces have a little color to them. When they are cooked to your liking, remove to a small dish and set aside.
- Using the rest of the ghee and olive oil, place the shrimp into the pan, season with the paprika, garlic powder, salt and pepper. Sauté until done.
- Drain the orzo, add the fresh dill and feta chunks and the sauteed veggies. Toss to combine, season again if necessary and add your shrimp.

A fresh and very quick dinner that can use up some of the odd bits of veggies
