Chicken Sausage and Broccoli with Wine Sauce
There are a million versions of this on the internet. This is a fast, flavorful dish when you have to cook, but really don't want to.

Ingredients
- 1 lb. ground chicken (or use chicken sausage)
- *1 tbsp sausage seasoning
- 1 head broccoli, cut into small heads
- 1 cup dry orecchiette (4 oz)1 tbsp olive or avocado oil
- Salt and pepper
- 2 cloves minced garlic (or use garlic powder)
- 4-5 cremini mushrooms, chopped
- 1/4 red onion, diced
- 1 tbsp flour
- 1 tbsp butter
- 1/3 cup white wine
- 1/4 cup chicken broth
- 1/4 cup parmesan cheese
- Small bits of toasted pine nuts
Instructions
- Bring a pot of water to boil over high heat and while that is heating up, chop your broccoli into bite size pieces.
- Over medium high heat, add 1 tbsp olive oil to a pan and add the broccoli. Season with a pinch of salt and cook until crisp tender. Remove to a lidded container to steam and stay warm.
- Add the ground chicken to the pan, Use whatever tool you use to break up ground meat and break it into small pieces. Add the mushrooms and onions, and seasonings, and cook until all of the water has cooked out of the chicken. Remove to the same dish that's warming the broccoli.
- Add the butter to the pan and melt, then add the flour, stirring constantly for about 1-2 minutes to cook the flour mixture. Add the wine, cook for 30-45 seconds, then add the chicken broth, whisking to make a slightly thick gravy of sorts, then add the parmesan, stirring until melted.
- Add the chicken, broccoli, and the orecchiette back to the pan and stir, letting the sauce coat the mixture.
- Serve with some toasted Artisan bread with garlic.

This was great - adding the wine thickening is the way to make this dish moist, while upping the flavor profile just a bit. I have made it plenty of times before, but this is the recipe I will end up keeping
