Sweet Cherry Salsa

Ingredients
- 2 1/4 cups pitted cherries (3/4 pound), roughly chopped
- 1 tablespoons Imperial Sugar Extra Fine Granulated Sugar
- 1/4 cup fresh lime juice (about 2 limes)
- 1 teaspoon red wine vinegar
- 1 teaspoon minced garlic (about 2 cloves)
- 3/4 teaspoon kosher salt
- 1/4 cup finely chopped red onion
- 2 fresh jalapeño peppers, seeded and finely chopped
- 1/4 cup chopped fresh cilantro
Directions
- In a large bowl, stir cherries together with the sugar and let stand 5 minutes for the sugar to absorb.

When fresh cherries are available, it's sort of criminal not to eat them, again and again. I should have figured out a way (maybe use the broiler or the handheld kitchen torch) to brown the pork chops a little more - kind of looks awful.
