Homemade Potato Chips

Ingredients
 

  • unpeeled medium potatoes - think about 1 potato per person
  • 2 quarts ice water
  • salt
  • pepper
  • Oil for deep-fat frying
     

Directions
 

  1. Use a mandolin or a food processor fitted with a crinkle cutter. Cut the potatoes in thin slices, and cover in a bowl of ice water. Soak for at least 30 minutes, then drain, cover with a towel.
     
  2. Add at least 1.5 inches of peanut oil to your frying vessel of choice and bring the oil to 375.
     
  3. Using a spider (open weaved metal dipper) gently lower the potatoes into the hot oil. Fry until golden brown, stirring gently so you do not splash the oil. Remove to paper toweling and sprinkle with salt and pepper. Eat today! Work in batches until you are done.

Valerie and her BF came over for snacks - and we decided to make some home-made potato chips.  We had a lot of fun, made a huge mess - but in the end it was a big success.

 

Home-made potato chips are something everyone should try at least one time in your life.  They are so much better than the chips out of a bag, but honestly, they are a lot of work, and messy.  If you had a large family that gathered for football games, it would be a great idea.
