Bean and Cheese Chalupas

Ingredients


Base Preparation:
 

  • 1 15oz can pinto beans
  • 1/2 head Romaine Lettuce, sliced super thin
  • 4 Chalupa Shells


Pico de Gallo

 

  • 3 Roma Tomatoes, diced
  • 1/2 white onion, diced
  • 1/2 bunch cilantro, chopped fine
  • 2 cloves garlic, grated
  • 1 jalapeno pepper, frozen, grated
  • Salt, pepper to taste
     

Directions
 

  1. Heat the pinto beans in a small saucepan, add a dash of salt, cumin to taste. Bring to a boil. Drain the excess liquid off, then mash to a refried bean consistency. Set aside.
  2. Heat tortillas in a toaster or regular oven for 3 minutes until crisp.
  3. Spread each tortilla with 3 tablespoons refried beans, followed by a handful of shredded lettuce, sprinkle with a small amount of cheddar cheese, followed by a healthy large portion of Pico de Gallo.
  4. Take a teaspoon of Cotija cheese and pinch between your fingers. The cheese will crumble into nice small pieces. Salt and Pepper if desired.

Chalupas can be as complicated or as simple as you wish.   You can certainly fry your own chalupas, or use storebought. 

 

There are a few ways to change these up, most notably Ground Beef Chalupas, Chicken Chalupas, Breakfast Chalupas, Pulled Pork Chalupas, etc.  You can also broil a layer of cheese on top of the beans before adding the lettuce, and even add some home-made enchilada sauce on top of the beans.
