Spicy chorizo with fluffy scrambled eggs on crisp chalupas - a savory, satisfying breakfast bursting with flavor.
Chorizo Breakfast Chalupas

Ingredients
- Chalupa shells
 - Refried beans
 - Eggs
 - Pork Chorizo (bulk or if in casing, remove and cook)
 - Avocado slices
 - cilantro for garnish
 - Salsa Verde
 - 1 tbsp butter
 
Directions
- Cook pork sausage until done. Scramble eggs (1.5 per person).
 - Warm the refried beans in the microwave for about 2 minutes.
 - In another non-stick pan, melt the butter and scramble your eggs.
 - Assembly:
 - Spread refried beans on chalupa shell, top with chorizo, followed by scrambled eggs, and top with thin slices of avocado. Garnish with cilantro to taste.

We really enjoy spicy chorizo…for breakfast. There isn’t much to this recipe, but if you need it
