Paprika Tilapia with Basil Pesto Gnocchi

There really isn't much to this recipe, but will list the ingredients and method.

    • 1 (16 ounce) package potato gnocchi
    • 2 tablespoons butter
    • 1/4 cup basil pesto (homemade or store-bought)
    • Kosher salt
    • Freshly grated Parmesan cheese, for topping
    • Freshly ground black pepper
    • Optional:  a handful of cherry tomatoes


    1. You can make your own gnocchi - or purchased pre-made.  Either way, cook your gnocchi in a pot of boiling salted water, and when it floats, transfer to a warm skillet with the melted butter. 
    2. When all the gnocchi have been boiled, floated and transferred, raise the heat on the skillet and cook until crispy - at around a medium high heat, shuffling the pan frequently.  **If you are optionally adding some cherry tomatoes, now would be the time to add them so they squish down and cook just a bit.  When you have reached your desired level of crispiness, add 1/4 cup of basil pesto and parmesan cheese.
