Salmon and Spinach Bake

This wasn’t the prettiest thing to look at, but it did taste good.  At some point I will re-work this recipe as it didn’t quite turn out as I desired.  I also frequently freeze individual pieces of salmon with butter dill already on them.

Salmon and Spinach Bake

Ingredients

  • 1 salmon filet per serving
  • 1/2 cup panko bread crumbs
  • salt (pepper, garlic)
  • 1/2 cup packed baby spinach per serving
  • 1 small red onion (sliced (amount varies, don’t overpower dish, but enough to taste))
  • Butter
  • dill

Instructions

  1. Wash and spin spinach, place in individual baking dishes.
  2. Mix slightly softened butter will dill, set aside.
  3. Mix oil, panko and seasonings directly in the measuring cup.
  4. Assemble; place salmon filets on top of spinach beds, slather with the butter dill mixture, and top with panko bread crumbs. Bake at 400 until salmon is done, about 10-15 minutes.
