Bacon and Pea Pasta

Ingredients
 

  • 1 tablespoon olive oil
  • 6 slices bacon
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 shallot, finely minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 pound dried spaghetti
  • 1 cup frozen peas
  • 1 tbsp lemon, juice
  • 1/4 cup Grated Parmesan,  plus more for serving
    Salt and Pepper

 

 Instructions:

 

  1. Prepare the pasta according to the package directions, ensuring it stays al dente. Before draining, save one cup of the pasta water for later use.
  2. Warm the oil in a cast iron or nonstick pan over medium heat. Fry the bacon until it becomes crispy and golden, then transfer it to a paper towel to absorb the excess grease. Leave about one tablespoon of oil in the pan, discarding the rest. Add the shallots and garlic, cooking them until softened, aromatic, and lightly golden.
  3. Add the broth to the pan and let it simmer gently for around 5 minutes. When the liquid has reduced by a quarter, stir in the cream and peas. Allow the mixture to reach a gentle simmer. *Frozen peas can be added directly without thawing.
  4. Mix the grated parmesan into the sauce and let it melt completely. Taste the sauce and adjust with a bit of lemon juice and freshly cracked black pepper to your liking.
  5. Once the sauce reaches your preferred taste and thickness, add the drained pasta to the pan and toss to combine. Finish with a sprinkle of extra parmesan before serving

This was really good, and very easy to make.  It's now on a regular rotation.  I love peas and bacon (of course).  I always have frozen peas on hand, but I do tend to hoard bacon a bit...like buy it and freeze it but dole it out very sparingly like it will never be in the store again.  Weird. 

Anyway, on a mission to use up my freezer stash of Costco bacon.  I actually also used fresh peas in this photograph as our local grocery store had small bags of English Peas.

 

The dish comes together fairly fast and can usually be made in the time it takes to get your things together, having your water at boiling when you begin - by the time the pasta is cooked.  

 

You can substitute half and half for the heavy cream and sometimes I do, depending on how my Crohns is feeling on any particular day - somedays it's fine, others not.
