Ice Cream with Cherries and Dried Strawberries

Ingredients

  • 1 carton heavy whipping cream
  • 1 can sweetened condensed milk
  • 8-10 fresh pitted cherries
  • 8-10 fresh or frozen strawberries
  • 1 pkg freeze dried strawberries
  • 1/4 cup sugar

Directions

  1. About 15 minutes before you plan to make your ice cream, gather all of your ingredients. Place the bowl, beaters, cream, and condensed milk in the freezer. SET A TIMER!
  2. While those are chilling down, use your food processor or hand blender to puree the cherries, strawberries and freeze dried berries. The reason you are using freeze dried is to concentrate the flavor without encouraging the growth of ice crystals as you mixture freezes. (I have read to add 4-5 tbsp of vodka to keep that from happening but have not tried it).
  3. Whip the cream to stiff peaks. Fold in sweetened condensed milk. Layer in your container alternating with the cold fruit mixture - freeze until firm.

We made these shortly after moving in - you can still see the old kitchen in the background.
