Beef And Broccoli Noodle Stir Fry

Recipe adapted from Damn Delicious - and yes it was - damn delicious!  I have made this many times now - it's kind of a go-to recipe when there is a small bit of broccoli hanging out in the fridge and some red peppers.  Works with all seasons, just whenever you want something good and fast.

Ingredients

  • 1 (5.6-ounce) packages refrigerated yakisoba noodles 2 people
  • 1 tablespoon olive oil
  • 1 pound steak, thinly sliced across the grain
  • 1 head broccoli, cut into florets
  • 1/2 teaspoon sesame seeds

For the sauce

  • 3/4 cup sodium soy sauce
  • 3/4 cup beef broth
  • 1/4 cup honey
  • 3 tablespoons rice wine vinegar
  • 3 tablespoons brown sugar, packed
  • 4 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon Sriracha, optional

Instructions

  1. In a small bowl, stir together the sauce ingredients and 1/2 cup of water.
  2. Rinse the yakisoba noodles in a colander with hot water until loosened.
  3. Heat the oil in a large skillet over medium heat, add the steak (seasoned with salt and pepper) and  cook over medium high heat  until browned.
  4. While steak is cooking, microwave the broccoli for 2 minutes to begin the cooking process and make them more tender than crunchy.
  5. When the steak is cooked, stir in the noodles and broccoli, mix well.   Stir in sauce and heat through.  Cook for an addition 3-5 minutes until the sauce is slightly thickened.
