Zucchini Frittata

Ingredients

 

 

  • 1 each, yellow and green zucchini
  • 1/4 red onion, thinly sliced
  • 1 small tomato, seeds squeezed and medium chopped
  • 4 eggs, 2 egg yolks removed
  • 2 tbsp crumbled feta cheese
  • Salt and pepper
  • 1 tbsp butter

 

Directions

 

  1. Prepare ingredients so everything is in place, and preheat your broiler.
  2. Melt butter, and saute vegetables until mostly tender but not limp. Season with salt and pepper.
  3. Scramble the eggs in a dish and have at the ready. Add crumbled feta to the top of the pan, then add the eggs.
  4. Cook, over medium heat for 3-4 minutes until set. Remove pan from heat, and place under the broiler to finish cooking till golden brown.
  5. Serve with a piece of buttered toast, breakfast beverage of your choice and enjoy.
