
Zucchini Frittata

Ingredients
- 1 each, yellow and green zucchini
- 1/4 red onion, thinly sliced
- 1 small tomato, seeds squeezed and medium chopped
- 4 eggs, 2 egg yolks removed
- 2 tbsp crumbled feta cheese
- Salt and pepper
- 1 tbsp butter
Directions
- Prepare ingredients so everything is in place, and preheat your broiler.
- Melt butter, and saute vegetables until mostly tender but not limp. Season with salt and pepper.
- Scramble the eggs in a dish and have at the ready. Add crumbled feta to the top of the pan, then add the eggs.
- Cook, over medium heat for 3-4 minutes until set. Remove pan from heat, and place under the broiler to finish cooking till golden brown.
- Serve with a piece of buttered toast, breakfast beverage of your choice and enjoy.
