I have made this twice now - and each time I believe I could eat it once a week easily - I loved this recipe. It comes together super fast, I am sure you could use dry ramen noodles as well, but fortunately in this small little town - walmart carries yakisoba in the produce department.

Ground Beef Noodle Stir Fry

Ingredients
Sauce Ingredients
- 1/2 cup soy sauce
- 2 tbsp rice wine vinegar
- 2 tsp brown sugar
- 3 cloves garlic, minced
- 1 tbsp fresh grated ginger
- 1 tbsp sesame oil
- 2 packages yakisoba or udon noodles
- 1 lb ground beef (93/7)
- 1 onion, diced
- 1/2 red, green, bell peppers, sliced thin
- 1 small head broccoli
- 3 green onions, cut diagonally
Instructions
- Make the Sauce: In a small bowl, whisk together all the ingredients and set aside.
- *I used yakisoba noodles, which were steamed and pre-cooked, so nothing additional was needed. If you are using something you must cook, do so according to package directions in well salted water.
- Heat the oil, in a high walled skillet that has a tight fitting lid available. Brown the ground beef and onions until well cooked, crumbling the beef as you go. With 93/7 there should not be any discernable fat to drain.
- Pre-cook the broccoli florets in microwave for 3 minutes in salted water, drain. add to the beef mixture, stir in the ppers and cook for 5 minutes. Add the noodles, combining well, then add the sauce mixture and stir to combine all flavors.
- Turn the heat off - put the lid on the skillet for 5 minutes. Prepare drinks and set the table. When ready to serve, plate the food and sprinkle green onions on top.
