Ground Beef Stir Fry

I think this could be a duplicate of the Beef and Broccoli Noodle Stir Fry - OR, I decided to use this one to modify a beef and broccoli dish.  Who knows...

Ground Beef Stir Fry

Yield:

prep time: 15

cook time: 15

total time: 30

Ingredients

  • 1/2 cup soy sauce
  • 2 tbsp rice wine vinegar
  • 2 tsp brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp fresh grated ginger
  • 1 tbsp sesame oil
  • 2 packages yakisoba or udon noodles
  • 1 lb ground beef (93/7)
  • 1 onion, diced
  • 1/2 red, green, bell peppers, sliced thin
  • 1 small head broccoli
  • 3 green onions, cut diagonally

Instructions

  1. Make the Sauce: In a small bowl, whisk together all the ingredients and set aside.
  2. *I used yakisoba noodles, which were steamed and pre-cooked, so nothing additional was needed. If you are using something you must cook, do so according to package directions in well salted water.
  3. Heat the oil, in a high walled skillet that has a tight fitting lid available. Brown the ground beef and onions until well cooked, crumbling the beef as you go. With 93/7 there should not be any discernable fat to drain.
  4. Pre-cook the broccoli florets in microwave for 3 minutes in salted water, drain. add to the beef mixture, stir in the ppers and cook for 5 minutes. Add the noodles, combining well, then add the sauce mixture and stir to combine all flavors.
  5. Turn the heat off - put the lid on the skillet for 5 minutes. Prepare drinks and set the table. When ready to serve, plate the food and sprinkle green onions on top.
