Banana Bread

It is very easy to find hundreds upon hundreds of banana bread recipes on the internet.  I looked at them.  This one is easy, without a complete laundry list of 1000 ingredients.  It tastes like banana bread, and importantly...no matter the recipe, that's the ultimate end-game. 

Banana Bread

Ingredients

  • 1 stick butter
  • 3 ripe bananas
  • 2 large eggs
  • 1 tsp vanilla
  • 2 cups ap flour
  • 1 cup white sugar
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • *optional 1 cup chopped pecans or walnuts.

Instructions

  1. Preheat your oven to 350 and prepare your loaf pan by slathering with butter, or spraying with cooking spray. **optional is to add granulated sugar to the butter and sprinkle around like you would if you were flouring a pan. It gives your crust an extra crunch.
  2. Using a microwave, melt the stick of butter in a medium sized bowl, add the bananas and mash. This does not have to be smooth without lumps. Add the vanilla and eggs, mixing well.
  3. In another bowl, place the flour, sugar, baking soda, cinnamon and salt, and give it a stir to combine then add this mixture to the wet ingredients, until just combined.
  4. Bake 45-55 minutes until skewer pulls out cleanly. Rest for 10 minutes on a cooling rack in the pan, then remove by running a knife around the edges, flip, then rest the naked loaf on the cooling rack until cool enough to slice.
