Fried Egg Tortilla

Fried Egg Tortilla

Ingredients

 

  • 1 flour tortilla per serving
  • 1 egg per serving
  • Green or Red Salsa
  • Diced Tomato
  • Cilantro

 

Directions

 

  1. Spray tortilla with cooking spray and start to heat in a non-stick pan on medium heat. Cook until it starts to get brown on the one side.
  2. Remove tortilla from pan, and crack egg into it and break the yolk. Place tortilla on top of the egg, browned side down. Smash with spatula to remove air bubbles. Cook until firm, flip and cook for a few more seconds.
  3. Serve with salsa of your choice, diced tomatoes and cilantro.
