Cinnamon Sugar Scones

Ingredients

 

  • 3/4 cup butter, cold and cubed.
  • 2/3 cup turbinado sugar
  • 1 tbsp cinnamon
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 large egg yolk
  • 1 cup cold heavy cream
  • 1 tsp vanilla extract

 

Directions

 

  1. Preheat the oven to 400.
  2. Take 4 tbsp of the butter, 1/3 cup of the sugar, all of the cinnamon and mash together until completely blended, set aside.
  3. Add the flour, baking powder, and salt, along with the remaining 1/3 cup sugar to a bowl, mixing completely with a whisk.
  4. Take the remaining 8 tbsp of butter and cut into the dry mixture with either a pastry cutter, or your fingers until the mixture is crumbly.
  5. Whisk the egg yolks, cream, and vanilla together, then slowly add to the dry mixture. The dough will be stiff.
  6. Turn out onto a parchment lined baking sheet and form into 2 rounds, 3/4 thick. Gently cut each round into 6 wedges, then life and separate to 1/2 inch in between.
  7. Bake 20-25 minutes.
