Cinnamon Sugar Scones

Ingredients
- 3/4 cup butter, cold and cubed.
- 2/3 cup turbinado sugar
- 1 tbsp cinnamon
- 3 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 large egg yolk
- 1 cup cold heavy cream
- 1 tsp vanilla extract
Directions
- Preheat the oven to 400.
- Take 4 tbsp of the butter, 1/3 cup of the sugar, all of the cinnamon and mash together until completely blended, set aside.
- Add the flour, baking powder, and salt, along with the remaining 1/3 cup sugar to a bowl, mixing completely with a whisk.
- Take the remaining 8 tbsp of butter and cut into the dry mixture with either a pastry cutter, or your fingers until the mixture is crumbly.
- Whisk the egg yolks, cream, and vanilla together, then slowly add to the dry mixture. The dough will be stiff.
- Turn out onto a parchment lined baking sheet and form into 2 rounds, 3/4 thick. Gently cut each round into 6 wedges, then life and separate to 1/2 inch in between.
- Bake 20-25 minutes.
