Pesto Rice with Cherry Tomatoes

Ingredients
- 2 cups water
- 1 cup royal brand basmati rice, rinsed well
- 1 tsp salt
- 1 tbsp butter
- 1/3 cup grated parmesan cheese
- 1/4 cup pesto, either homemade or from a jar
Directions
- Begin by boiling the water in a small sauce pan, with the butter and salt added. When it reaches boiling, add the rice, stir, cover and cook for 10 minutes, and shut the heat off. Set time for 5 minutes.
- When the 15 minutes is up - add the pesto and parmesan to the saucepan with the rice and stir gently to completely combine. Top with halved cherry tomatoes.
