In an effort to cut down on fat..these are pretty good!  Recipe adapted from Elly Says Opa

Ground Chicken Sausage Patties

Ingredients

  • 1 lb. ground chicken
  • 1/2 tsp. dried sage
  • 1/2 tsp. dried marjoram
  • 1/2 to 3/4 tsp. dried thyme
  • 1/4 tsp. ground cayenne pepper
  • 1/4 tsp. ground allspice
  • 1/4 tsp. freshly ground black pepper
  • 3/4 tsp. kosher salt
  • 1 garlic clove finely minced or pressed
  • 2-3 tsp. olive oil for cooking patties
 

Instructions

  1. In a medium sized bowl, place all the ingredients and mix lightly until everything is blended well.  A good method would be to blend all the spices before incorporating into the ground chicken.
  2. Divide the mixture into 4, then those 4 into another 4, then shape the patties.  It's helpful to use a piece of parchment for this and something to apply even pressure.  (obviously didn't follow my own advice).
  3. Heat a non-stick pan over medium heat and cook until done, turning at least one time.  The sausage should be firm - no undercooking please.
