Hearty beef and bean burritos smothered in a creamy, spicy jalapeño sauce. A flavorful, easy-to-make meal perfect for weeknights or meal prep!
Beef and Bean Burritos
with Jalapeño Cream Sauce

Ingredients
- 1 lb. ground beef
- 1 onion, finely diced
- 1 bell pepper, diced
- 1/2 bunch cilantro, chopped roughly
- 1 can diced tomatoes, drained (use rotel if you like)
- Salt, pepper, garlic powder - about 2 tsp each
- 2 tsp Mexican oregano
- Flour tortillas
- 2 cup white American cheese, divided in half
- 1/4 cup milk
- 1 jalapeño, small diced
- 2 tsp butter
Directions
- Brown the ground beef in a skillet, with the onion and spices. Add the diced tomatoes and the cilantro and set on a low heat to simmer and meld the flavors.
- In another small saucepan, add the butter and melt, then add the tiny diced jalapeno to the skillet and cook for about 3 minutes to soften.
- Add the 1/4 cup of milk on low heat, then add the 1 cup of the cheese in small amounts whisking while you do so.
- Add more milk as needed to thin to the consistency you like after all of the cheese has been added and melted. You can add a tbsp of the chopped cilantro to this sauce if you like.
- Take your tortillas and lay out flat, add the ground beef mixture to the center, about 1/3 of a cup, sprinkle with a small amount of cheese, and roll tightly. Place on a protected sheet pan and set aside until all of the burritos are rolled.
- Place in a 400 degree oven for 10 minutes, remove, plate, and drizzle with your cheese sauce.
