Ingredients

  • 1 lb. ground beef
  • 1 onion, finely diced
  • 1 bell pepper, diced
  • 1/2 bunch cilantro, chopped roughly
  • 1 can diced tomatoes, drained (use rotel if you like)
  • Salt, pepper, garlic powder - about 2 tsp each
  • 2 tsp Mexican oregano
  • Flour tortillas
  • 2 cup white American cheese, divided in half
  • 1/4 cup milk
  • 1 jalapeño, small diced
  • 2 tsp butter

Directions

  1. Brown the ground beef in a skillet, with the onion and spices. Add the diced tomatoes and the cilantro and set on a low heat to simmer and meld the flavors.
  2. In another small saucepan, add the butter and melt, then add the tiny diced jalapeno to the skillet and cook for about 3 minutes to soften.
  3. Add the 1/4 cup of milk on low heat, then add the 1 cup of the cheese in small amounts whisking while you do so.
  4. Add more milk as needed to thin to the consistency you like after all of the cheese has been added and melted. You can add a tbsp of the chopped cilantro to this sauce if you like.
  5. Take your tortillas and lay out flat, add the ground beef mixture to the center, about 1/3 of a cup, sprinkle with a small amount of cheese, and roll tightly. Place on a protected sheet pan and set aside until all of the burritos are rolled.
  6. Place in a 400 degree oven for 10 minutes, remove, plate, and drizzle with your cheese sauce.

These are great for freezer meal prep without the sauce of course.
