Roasted Cauliflower and Garlic Spaghetti

Simple and probably healthy if you don't use 1/2 stick of butter...

  • Spaghetti
  • 1/2 head cauliflower
  • 2 cloves garlic
  • 2 tbsp butter
  • 1 tbsp olive oil

  1. In a large sauté pan, mix 1 tbsp butter and 1 tbsp olive oil and heat over low-medium heat. Add cauliflower, stir to coat and allow to sauté for 20 minutes, stirring often until cauliflower is tender and starting to brown.
  2. Meanwhile, prepare spaghetti, if it finishes before you are ready, drain and hold warm.
  3. When cauliflower is tender and brown, add garlic, sautéing for 1-3 minutes, add cooked spaghetti and toss to mix thoroughly. Viola.. it’s awesome!
