Pretzel Dogs

Ingredients
- 1 12 oz room temperature beer
- 1 tbsp sugar
- 2 tsp kosher salt
- 1 package active dry yeast
- 4 1/2 cups bread flour
- 1/4 cup unsalted butter, melted
- 1 large egg yolk
- 1 tbsp water
- 2/3 cup baking soda
- 1/4 cup kosher salt, divided
- 18 Hot dogs
Instructions
- In a saucepan, using low heat, bring the beer to 110 degrees. Add the sugar, 2 tsp salt, stir well, add the yeast, and leave for 10 minutes.
- Place the flour and butter into a mixer, whir to combine, then add the yeast mixture. Knead for 10 minutes on low.
- Preheat the oven to 450 and lightly grease 2 baking sheets. Beat the egg yolk in a small bowl with the 1 tbsp of water.
- Stir the baking soda into 10 cups of water, into a large part until dissolved, then turn on the heat to high and bring to boiling.
- Turn out the dough onto a silpat, and roll it into a rectangle, slice 1 inch wide strips so you can wrap them around your hot dogs, leaving both ends open.
- Drop the dough dogs into the boiling water for about 30 sections, then remove and place on the prepared baking sheets. Brush each with the egg yolk mixture and sprinkle with salt. Bake for 15 minutes or until golden brown.
