Here's a delightful recipe for Blueberry Goat Cheese Crostini, perfect for an appetizer or a light snack.
Ingredients:
- 1 baguette, sliced into 1/2 inch thick slices
- 2 tablespoons olive oil
- 1 cup (about 150g) fresh blueberries
- 2 tablespoons honey
- 1 teaspoon lemon zest
- 1/2 tablespoon lemon juice
- 4 ounces (113g) goat cheese, softened at room temperature
- Fresh basil leaves, for garnish, optional
Instructions:
- Toast the Baguette by preheating your oven to 400°F. Brush each side of the baguette with some olive oil, place on a baking sheet and bake for 7-10 minutes until golden brown.
- In a small saucepan over medium heat, combine the blueberries, honey, lemon zest, and lemon juice. Cook, stirring occasionally, until the blueberries start to burst and release their juices, about 5-7 minutes. You want a mixture that's still chunky but has some syrup. Allow to cool slightly, and season with a pinch of salt to balance the sweetness.
- Once the bread is cooled, spread a layer of goat cheese on each slice, then spoon the blueberry mixture over the top. Garnish with some fresh basil if desired.
