Migas (Mexican Eggs)

Ingredients
- Corn Tortillas (2 per person)
- 2 Eggs (1 yolk removed) per person
- 1/3 cup Red Bell Pepper, chopped
- 1/3 cup red or yellow onion, chopped
- Cilantro for garnish
- Hot sauce
Directions
- Cut or tear tortillas into strips and place in a non-stick pan. Sauté on medium high. When strips are almost crispy and brown, add peppers and onions. Sauté for about 2-3 minutes, depending on how crispy you like your vegetables.
- Raise heat on the pan, move tortilla mixture to the outside edges. Pour in scrambled eggs. When eggs start to set, start mixing the tortilla mixture back in so everything is mixed well. Cook eggs until firm.
- Serve with desired amount of hot sauce.

Literally one of the best breakfasts EVER! I could eat this every week, and actually often do.
