Mini Cheesecakes with Caramel Drizzle

  • 1 stick melted butter
  • 1/4 cup sugar
  • 1-1/2 cups graham cracker crumbs
  • 2 8 oz packages cream cheese (softened)
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 4 egg whites
  • 6 tbsp caramel topping


  1. Heat oven to 350. Using food processor finely crush graham crackers. Combine crumbs melted butter and sugar, mixing well. Press into mini cheesecakes forms.
  2. Filling
  3. Beat cream cheese with mixer until smooth. Blend in sugar, and vanilla. Beat in egg whites, one at a time just until well blended.
  4. Pour into prepared pans, dividing evenly. Bake until set, remove from the oven and allow to stand for 10 minutes.
  5. Drizzle with caramel and serve chilled.
