This was a really cute idea for Valentine's Day

Sweetheart Potatoes

Ingredients

  • 2 russet potatoes, scrubbed and washed
  • 2 tablespoons avocado oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ground paprika
  • 1 sprig fresh rosemary, roughly chopped
  • Mini heart-shaped cookie cutter

Instructions

  1. Preheat the oven to 400°.  Wash and scrub the potatoes, peel, slice into 1/4 inch rounds into a bowl of clean water (to keep from browning.)
     
  2. When you have all of your potatoes sliced, using a small heart shaped cookie cutter, begin pressing out the heart shaped pieces of potatoes, dropping them back into the water as you go.
     
  3. When all the hearts have been stamped out, rinse all of the hearts with clean water, add 2 tsp of salt to the water, and bring to a boil, boil for 5 minutes, then drain.
     
  4. Drizzle with olive oil, salt, pepper, and garlic and spread out on a parchment lined cookie sheet.  Bake until browned, serve, and enjoy.
