Sweetheart Potatoes

Ingredients
- 2 russet potatoes, scrubbed and washed
- 2 tablespoons avocado oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1/4 teaspoon ground paprika
- 1 sprig fresh rosemary, roughly chopped
- Mini heart-shaped cookie cutter
Directions
- Preheat the oven to 400°.Wash and scrub the potatoes, peel, slice into 1/4 inch rounds into a bowl of clean water (to keep from browning.)
- When you have all of your potatoes sliced, using a small heart shaped cookie cutter, begin pressing out the heart shaped pieces of potatoes, dropping them back into the water as you go.
- When all the hearts have been stamped out, rinse all of the hearts with clean water, add 2 tsp of salt to the water, and bring to a boil, boil for 5 minutes, then drain.
- Drizzle with olive oil, salt, pepper, and garlic and spread out on a parchment lined cookie sheet. Bake until browned, serve, and enjoy.

This was a really cute idea for Valentine's Day. I also remember this being fairly hard on my hands. In the future should I ever feel the desire to make these again, I would slice the potatoes as such and boil them for 5 minutes so they were a little easier to cut with the cookie cutter.
