Crispy Scallops in a Wine Butter Sauce

Ingredients

 

  • Scallops
  • 1/2 Cup All Purpose Flour
  • 1/2 Cup Panko Breadcrumbs
  • Salt And Pepper
  • 1/2 Cup White Wine
  • 1 Tablespoon Butter
  • 1/2 Cup Buttermilk
  • Oil For Frying
  • 1 Tablespoon Fresh Chopped Chives Optional

 

Directions

 

  1. Swill scallops in buttermilk, and drain. Place flour, panko and spices in a Ziplock bag, shake to mix. Place scallops in bag, a few at a time and shake to coat completely.
     
  2. Heat pan to medium high, sauté scallops until a good brown develops. Once cooked, remove scallops to paper towels.
     
  3. Add wine to the pan and scrape up bits. Add butter, and simmer until reduced by half, about 3 minutes. Add scallops back to pan and spoon sauce over, sprinkle with chives if using.
     
  4. Serve immediately
