Crispy Scallops in a Wine Butter Sauce

Ingredients
- Scallops
- 1/2 Cup All Purpose Flour
- 1/2 Cup Panko Breadcrumbs
- Salt And Pepper
- 1/2 Cup White Wine
- 1 Tablespoon Butter
- 1/2 Cup Buttermilk
- Oil For Frying
- 1 Tablespoon Fresh Chopped Chives Optional
Directions
- Swill scallops in buttermilk, and drain. Place flour, panko and
spices in a Ziplock bag, shake to mix. Place scallops in bag, a few at a
time and shake to coat completely.
- Heat pan to
medium high, sauté scallops until a good brown develops. Once cooked,
remove scallops to paper towels.
- Add wine to
the pan and scrape up bits. Add butter, and simmer until reduced by half,
about 3 minutes. Add scallops back to pan and spoon sauce over, sprinkle
with chives if using.
- Serve immediately
