Sometimes these old photos are cringe.  The scallops were good though.

Crispy Scallops in a Wine Butter Sauce

Yield: 4 Servings

Ingredients

  • scallops
  • 1/2 cup all purpose flour
  • 1/2 cup panko breadcrumbs
  • salt and pepper
  • 1/2 cup white wine
  • 1 tablespoon butter
  • 1/2 cup buttermilk
  • oil for frying
  • 1 tablespoon fresh chopped chives optional

Instructions

  1. Swill scallops in buttermilk, and drain. Place flour, panko and spices in a ziplock bag, shake to mix. Place scallops in bag, a few at a time and shake to coat completely.
     
  2. Heat pan to medium high, saute scallops until a good brown develops. Once cooked, remove scallops to paper towels.
     
  3. Add wine to the pan and scrape up bits. Add butter, and simmer until reduced by half, about 3 minutes. Add scallops back to pan and spoon sauce over, sprinkle with chives if using.

  4. Serve immediately
