Savory Stuffing Muffins

 Ingredients

 

  • 6 oz of cubed dried cornbread, and any other white bread
  • 1 1/2 cups water or chicken broth
  • 1/4 cup butter, melted
  • 1 apple, finely chopped
  • 1 stalk celery, finely chopped
  • 1 tablespoon chopped fresh Italian (flat-leaf) parsley
  • Stuffing seasonings:  2 tsp sage, 2 tsp dried thyme, 2 tsp crushed rosemary

 

 

Instructions
 

  1. Heat oven to 350°F. Spray 9 regular-size muffin cups with cooking spray.
  2. In large bowl, toss stuffing mix, water and butter. Add apple, celery and parsley; toss until combined. Divide mixture evenly among muffin cups, pressing mixture in cups with spoon.
  3. Bake about 20 minutes or until stuffing is firm and tops are golden brown.

I don't know how it took the world over 10 years to catch up with me.  Not everyone likes stuffing, so this was a perfect solution, especially for those of us who LOVE stuffing.  We had the Grey's from California over for the holiday, and went all out on the food.  The idea of putting the stuffing into the muffin cups just came to me, as I thought I would get more crunchy 'side of the casserole' type thing going on - it did not disappoint.
