Chicken Chalupas

Ingredients

  • corn tortillas
  • refried beans
  • cooked chicken
  • shredded cheese
  • Cotija cheese
  • pico de gallo
  • Shredded Lettuce
  • Cooking oil
  • 1/2 red onion, diced
  • 1 medium tomato, diced

Instructions

  1. If you insist on making your own shells, that's fine. It's not difficult - fry up some corn tortillas. It's actually easier to bake them on a cookie sheet with a bit of oil brushed on them, but for convenience - I buy these pre-fried and in a stacked plastic wrapped package.
  2. Season up your cooked chicken by adding some chili powder, cumin, garlic powder, onion powder. If you want to get all fancy…you can take some dried chiles, soak them after bringing to a boil, and essentially sort of making your own enchilada sauce.
  3. Layer the beans, chicken, lettuce, tomato, red onion, cilantro, and cheese and pico. Eat as many as you like.
