Ingredients
- 1.5 eggs per person
- Breakfast Potatoes
- Salsa
- Flour Tortillas
Directions
- Heat flour tortilla in a dry nonstick pan over medium heat for about 1 minute each side. Place the tortilla onto your plate.
- Scramble 2 eggs, with 1 yolk removed. Put 1/2 tsp butter into a non-stick pan, melt, then add your eggs and scramble until done.
- Add the eggs, potatoes, and salsa, avocado if you have it, roll, eat, and enjoy.

All things mexican, I just cannot get enough. These breakfast tacos always hit the spot for filling, spicy, and tactical - because you cannot eat a taco with a fork.
