Breakfast Tacos

Because I am on a mission to have breakfast tacos every day!

  • 1.5 eggs per person

  • Breakfast Potatoes

  • Salsa

  • Flour Tortillas


  1. Heat flour tortilla in a dry non stick pan over medium heat for about 1 minute each side.  Place the tortilla onto your plate.

  2. Scramble 2 eggs, with 1 yolk removed.  Put 1/2 tsp butter into a non-stick pan, melt, then add your eggs and scramble until done.

  3. Add the eggs, potatoes, and salsa, avocado if you have it, roll, eat, and enjoy.
