Sausage and Penne with Tomato Sauce

Ingredients

 

  • 2-1/2 cups uncooked penne pasta
  • 1 pound Italian sausage links, cut into 1-inch pieces
  • 1 large onion, halved and sliced
  • 1 medium green pepper, sliced
  • 1 tablespoon olive oil
  • 1 can (14-1/2 ounces) stewed tomatoes, cut up
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon crushed red pepper flakes
  • Grated Parmesan cheese, optional


Directions

 

  1. Begin by cooking the pasta by adding water to a 3 quart saucepan. Bring the water to a boil, add 2 tsp salt, and add the pasta. Stir occasionally for the next 10 minutes.
     
  2. While the pasta is cooking, place a high-wall stainless steel pan on medium. Cook the sausage to the browned stage, along with the onions and green peppers until the sausage is completely cooked. Add the tomatoes and sauce. Adjust the seasons with your spices.
     
  3. Once the pasta is cooked, drain and place in a colander. To serve, add the penne to a pasta dish, and top with your sausage sauce. Sprinkle or shave some parmesan for added flavor.

Once in a while, my stomach allows me to have something like sausage.  It doesn't matter that the tomato sauce will wreak havoc and I will have to eat a gazillion tums, but that doesn't matter.  This is savory, sausage-y goodness.
