Shrimp Stir Fry

Ingredients
- 1 lb. shrimp, shells and tail removed
- 2 cups cook and cooled white rice
- 1/4 cup sliced red onion
- 2 small carrots, julienned
- 2 stalks celery, sliced thin
- 5-6 mushrooms, sliced
- 2 sliced green onions
- 1/4 cup tamari or soy sauce
- 1/2 cup water
- 2 tsp brown sugar
- 1 tablespoon cornstarch
- 1 tbsp butter,
- 2 tsp peanut oil
- Salt and pepper to taste
Directions
- Prepare
all of the vegetables, peel the shrimp.
- Add the soy sauce, water,
brown sugar, and cornstarch to a small cup and stir to combine. Set aside.
- Melt the butter in a 10
inch nonstick pan, then add the peanut oil and swirl to combine. Add the shrimp and sauté slightly. Add the vegetables, and begin to sauté
all of them together, until the shrimp is cooked through.
- Add the cooled rice, and
continue to cook until completely heated, and there is a bit of brown to
the vegetables.
- Pour the sauce mixture over everything, stir, and let thicken for a few minutes. Serve and garnish with sliced green onions.

Clearly, this was better than it looked. My family starts giving me all the stares when I break out the camera while I am cooking. And clearly…food photography is a craft all unto itself. One cannot simply focus, get the right lighting and move on. There is an art to it, and I don't possess it. Yet.
Anyway, Shrimp Stir Fry is almost like a what do I have in the refrigerator that I can cook quickly and throw some soy sauce on and call it stir fry. This is exactly what it looks like. We did have some really good egg rolls to go with it though. Not home-made.
