Migas - Mexican Eggs

Extra delicious breakfast - don't save it for a special occasion - have some today

  • 2 eggs per person - 1 yolk removed
  • 2 corn tortillas per person, cut into strips
  • 2 tbsp red or green bell peppers, chopped
  • 1 tbsp red or yellow onion per person, chopped
  • Olive oil
  • Salsa for serving


  1. In a saute pan, add the olive oil and the tortillas strips. Cook over medium heat until tortillas are crispy - at this point, add the peppers and onions. Cook for an additional 2 minutes.
  2. Add the egg mixture and turn the heat up, and scramble the eggs. You want the heat higher at this point, so you do not get your tortillas softened up too much.
  3. Plate, and add your desired amount of salsa.
