Migas - Mexican Eggs

Ingredients
- 2 eggs per person - 1 yolk removed
- 2 corn tortillas per person, cut into strips
- 2 tbsp red or green bell peppers, chopped
- 1 tbsp red or yellow onion per person, chopped
- Olive oil
- Salsa for
serving
Directions
- In a sauté pan, add the olive oil and the tortillas strips. Cook
over medium heat until tortillas are crispy - at this point, add the
peppers and onions. Cook for an additional 2 minutes.
- Add the egg
mixture and turn the heat up, and scramble the eggs. You want the heat
higher at this point, so you do not get your tortillas softened up too
much.
- Plate, and
add your desired amount of salsa.

All the love for all things Mexican Food. My old BFF, Denise, (still friends) from back in high school frequented a restaurant in downtown Houston, called Bertha's. It was a friend of her family's. Whenever we could scrape enough money together to go out to eat, and we had enough gas in our car to make it downtown, we would go.
It's been my favorite breakfast since I was a teenager - the crispy chips, creamy eggs, and spicy salsa are just a fantastic way to start your day.
