Ranch Chicken Meatballs with Broccoli Couscous

Ingredients
Chicken Meatballs
- 1 pound ground chicken
- 1 large egg, lightly beaten
- ⅓ cup finely grated cheddar cheese
- ¼ cup seasoned breadcrumbs
- 1 teaspoon dried chives
- 1 teaspoon garlic powder
- 1/2 teaspoon dried dill
- ¼ teaspoon onion powder
- kosher salt and pepper
- 2 tablespoons olive oil, for cooking
- ranch dressing, for serving
Broccoli Couscous
- 3 cups chicken or vegetable stock
- 2 cups dry couscous
- 1 ½ cups broccoli florets
- 1 tablespoon unsalted butter
- salt and pepper
Directions
Ranch Chicken Meatballs
- Combine the chicken, egg, cheddar, breadcrumbs, chives, garlic powder, dill, onion powder and a big pinch of salt and pepper. Mix until just combined.
- Form the mixture into meatballs that are roughly 1-inch in size.
Air Fryer Directions for Meatballs:
- Place a parchment in your air fryer that corresponds with the size of your unit. Place the meatballs in, set the fryer to 400 degrees, for 8 minutes.
- After 8 minutes, swirl around and cook for another 8 minutes or until you have reached 165 degrees.
Skillet Directions:
- Warm olive oil in a nonstick skillet over medium heat. Arrange the meatballs in a single layer and cook, turning occasionally, until all sides are browned and their internal temperature reaches 165°F. This process should take about 10 minutes.
Broccoli Couscous
- Pour 3 cups of stock into a saucepan and bring it to a boil. Stir in the couscous, broccoli, and butter, then return the mixture to a boil.
- Lower the heat to a gentle simmer. Cover the saucepan and let it cook for 12 to 15 minutes, or until the liquid is fully absorbed.
- Once done, take it off the heat, fluff the couscous with a fork, and let it rest for 5 minutes.
- Adjust the seasoning with salt and pepper to taste before serving.

This is a really good meal, and I love a good chicken meatball. How Sweet Eats seems to have a lot of chicken meatball recipes on her site - and so far everyone that I have tried has been fantastic.
If you dislike touching raw chicken of any kind, try using a danish whisk to bring the meat mixture together. You will wish you would have thought of it sooner.
