Spicy Shrimp Tacos with Garlic Cilantro Lime Slaw

Ingredients
 

Garlic Cilantro Lime Sauce:

  • 1/4 cup oil
  • 1/2 cup chopped green onions
  • 1/2 cup cilantro leaves
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • juice of 2 limes
  • 1/2 cup sour cream or full-fat Greek yogurt
  • 1/4 cup water (if needed, to thin sauce)
     

Shrimp Taco Spice Mix:

  • 2 teaspoons each chili powder and cumin
  • 1/2 teaspoon each onion powder and garlic powder
  • 1/4 teaspoon cayenne pepper (more or less to taste)
  • 1 teaspoon coarse sea salt
     

Stuff for the Shrimp Tacos:

  • 1 lb. shrimp, peeled and deveined, tails removed
  • 2–3 cups shredded green cabbage
  • 8 small tortillas (corn or flour)
  • 2 avocados
  • 1/4 cup Cotija cheese
  • lime wedges for serving
     

Directions
 

  1. Sauce:    Blend all the sauce ingredients in a food processor or blender until smooth. If it's too thick, add a bit of water to reach the desired consistency.
  2. Slaw:    Mix a portion of the sauce with the shredded cabbage, reserving the rest for drizzling over the tacos later.
  3. Shrimp:    Use paper towels to pat the shrimp dry. Coat them evenly by tossing them with the spice mix in a small bowl. Heat a drizzle of oil in a large skillet over medium-high heat. Add the shrimp and sauté for about 5-8 minutes, flipping occasionally, until fully cooked.
  4. Assembly:    For an easy-to-eat and visually appealing taco, layer the ingredients in this order: smashed avocado, slaw, and shrimp. Finish with Cotija cheese, lime wedges, and a drizzle of the reserved sauce.

There is one word to describe these tacos - amazing!  I seriously licked my fingers as the sauce was dripping out.  And how many ways do I love shrimp?  Too many to count!    The Garlic Cilantro Lime Sauce is out of this world!  I have noticed this sauce in a few other recipes like POY's Ridiculously Good Chicken Tacos - and they are just that, ridiculously good. 

I didn't get a good photo of that dish when I cooked it, but I made it for the kids when they were here, and stupidly used 2 packages of chicken.  So now I have leftover seasoned chicken in my freezer just waiting to make them again.
