Boursin Chicken Pasta

Boursin Chicken Pasta

 Ingredients

 

  • 8 ounces uncooked pasta
  • 1 tbsp. butter
  • 2 cloves garlic, minced
  • 1 (5.2 ounce) package Boursin Fine Herbs & Garlic cheese,  softened
  • 3/4 cup chicken broth
  • 1/2 cup heavy/whipping cream
  • 1/2 tsp. lemon juice
  • 1-2 tbsp. chopped fresh parsley
  • 1/4 tsp. onion powder
  • 1/4 tsp. Italian seasoning
  • 2 chicken breasts, sliced long, then into chunks
  • 2 cups (packed) fresh baby spinach
  • Salt & pepper to taste
  • Freshly grated parmesan cheese optional, to taste

 

Directions


 

  1. Cook the Pasta:    Bring a pot of salted water to a boil and cook the pasta until al dente, following the package instructions.
  2. Prepare the Chicken:    Heat a bit of olive oil in a skillet over medium-high heat. Add the chicken pieces and let them cook undisturbed for about 5 minutes to develop a golden-brown crust. Stir several time, while seasoning with salt and pepper. 
  3. Continue  cooking until fully done. Remove from the pan and set aside.
  4. Make the Sauce:      In the same skillet, melt the butter over medium-high heat. Add the garlic and sauté for 30 seconds to 1 minute until fragrant. Stir in the Boursin cheese, chicken broth, cream, lemon juice, parsley, onion powder, and Italian seasoning. Mix well until the ingredients are fully combined.
  5. Once the mixture begins to simmer, lower the heat slightly and let it bubble gently for about 5 minutes.
  6. Combine Everything:     Return the cooked chicken to the skillet, then add the spinach. Stir and cook for another couple of minutes until the spinach has wilted and everything is heated through. Keep in mind that the sauce will thicken as it cools, so avoid over-reducing it. If it becomes too thick, add a bit of the hot pasta water before draining the pasta.
  7. Finish and Serve:      Add the drained pasta to the skillet and toss everything together. Taste and adjust seasoning with salt and pepper as needed. Serve with freshly grated Parmesan cheese, if desired.

This of course was really good, or it wouldn't be here on this blog.  I did not however thin the sauce enough, it's easy to get sloppy when your feet are tired and you have been standing at the stove for a bit.

 

I changed the recipe to use fresh chicken, the original called for cooked shredded rotiserie chicken, which I am not a fan of - it always has a 'taste' that makes me pause.  I even have trouble with the fantastic package of chicken you get from costco.  I also happen to get my chicken from our local butcher in 40lb. Boxes - and it's actually harder to use all of that than you might think.

 

The dish is also prettier if you use the bowtie pasta as the original, but I don't think I had any.
