Breakfast Chalupas

Servings: As Many As

Cook time: 10

Ingredients:

 

Chalupa Shells - Pre-Fried

Refried Beans

2 eggs per Serving

1/2 avocado per chalupa

Cilantro and Salsa for Serving 

Oil for cooking eggs

 

Instructions:

 

Heat your chalupa shells in an oven or toaster oven for about 2-3 minutes to warm.

 

Heat the refried beans in a microwave safe dish, add a dash of water if you need to thin them a bit.

 

Scramble your eggs (I will not give instructions for this), have your cilantro and avocado sliced, and a big spoon in your jar of salsa.

 

Layer…chalupa shell, beans, eggs, avocado, salsa, cilantro - that's all there is to it.


Notes:  This is a great way to use up leftover refried beans.  It's also incredible quick and satisfying.  Our schedule is eggs on Saturday morning.
