Pesto Chicken en Papillote

Ingredients
- 2 boneless skinless chicken breasts
- 1 tbsp olive oil
- 5 cherry tomatoes, halved
- 1 tbsp pesto
Instructions
- Tear off a good size piece of parchment paper, probably twice the size of your chicken breast. Place the chicken in the middle.
- Season with salt and pepper, then spread about 1 tablespoon of pesto on top, and place a few cherry tomatoes. You can also use fresh tomato slices in the summer when in season.
- Fold the paper up by bringing opposite sides together, and folding, then bring the other two sides together and fold those as well - you may have to play a bit with it to keep them closed.
- Bake at 350 for 35 minutes.

Probably one of the EASIEST things you can do for dinner, especially if you just don't feel like it. We served this wish some roasted cauliflower that cooked alongside of the chicken and Done!
