
Tomato Beef and Gnocchi

Ingredients
- 1 pound extra lean ground beef
- 2 tbsp tomato paste (from a tube)
- 2 tsp chili powder
- 1/2 medium onion, chopped
- 3 cloves garlic minced (oops)
- 1 tbsp Italian seasoning
- 1 can diced tomatoes with juices
- 1/3 cup chicken broth
- 1/2 cup half and half
- 1 pound uncooked potato gnocchi
- 1/2 cup freshly grated parmesan cheese
- Salt & pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium high heat for about 5 minutes, Add the tomato paste, then add the onion and the Italian seasonings, and continue cooking for an additional 5 minutes. Add the diced tomatoes. Bring to a boil, then add the gnocchi. Stir to mix completely, put a lid on and simmer gently for 10 minutes.
- Uncover the pan, add the half and half, parmesan, stir and cook uncovered for another 10 minutes until the sauce has thickened.

Notes: This was pretty good, it's been on my list for a while,
but with my ongoing foot issues, it was perfect. Fast and easy! I could have
seasoned heavier though.
