Tomato Beef and Gnocchi

Servings: 4

Prep time: 15

Cook time: 15

1 pound extra lean ground beef

2 tbsp tomato paste (from a tube)

2 tsp chili powder

1/2 medium onion,  chopped

3 cloves garlic minced (oops)

1 tbsp Italian seasoning

1 can diced tomatoes with juices

1/3 cup chicken broth

1/2 cup half and half

1 pound uncooked potato gnocchi

1/2 cup freshly grated parmesan cheese

Salt & pepper to taste

In a large skillet, brown the ground beef over medium high heat for about 5 minutes, Add the tomato paste, then add the onion and the Italian seasonings, and continue cooking for an additional 5 minutes.  Add the diced tomatoes.  Bring to a boil, then add the gnocchi.  Stir to mix completely, put a lid on and simmer gently for 10 minutes.

Uncover the pan, add the half and half, parmesan, stir and cook uncovered for another 10 minutes until the sauce has thickened.

Notes:  This was pretty good, it's been on my list for a while, but with my ongoing foot issues, it was perfect.  Fast and easy!  I could have seasoned heavier though.  Recipe was inspired and adapted from Salt and Lavender.
