Bourbon Chicken

Ingredients
For the chicken:
1lb boneless chicken breasts
1 tsp salt, garlic powder, pepper, onion powder
1-2 tablespoons olive oil
Sauce Ingredients
1/2 tsp garlic powder
1 tsp ground ginger
1/3 cup apple cider
1/3 cup water
1/3 cup light brown sugar
2 tbsp rice vinegar
1/4 cup soy sauce
Vegetables
5 small carrots, cut into bite size pieces
2 small zucchini, cut into bite size pieces
1 yellow onion, cut into bite size pieces
3 garlic cloves, minced
Salt, pepper
1 tbsp olive oil
Green onions or chives, chopped for garnish
Instructions
Sauce Instructions:
Combine all of the sauce ingredients and set aside.
Chicken Instructions:
Season the chicken with salt, pepper, garlic and onion powder. In a non-stick skillet over medium high heat, sauté the chicken in a tablespoon of olive oil, stirring often to turn and brown the chicken.
Vegetable Instructions:
Preheat the oven to 425. Toss the vegetables in some olive oil, and season. Lay on a parchment lined baking sheet and cook for 10 minutes, turn with a spatula, and cook for another 15.
Saucing the chicken:
Add the prepared sauce to the chicken, and turn the heat to medium high. Simmer at a fast simmer for 10-15 minutes until the sauce starts concentrating and reducing and coating the chicken. You should have no more than 3-4 tablespoons of sauce left in the pan.
Brown Rice is the perfect companion to this dish.
