Stovetop Fritatta with Mushrooms, Spinach and Onions

  • 2 eggs per person, 1 yolk removed
  • butter for the pan
  • 1 small handful of spinach
  • 1 tbsp parmesan cheese
  • 1/2 cup spinach
  • 4-6 cremini mushrooms
  • 1/4 chopped red onion
  • Splash of half and half, or cream
  • Salt and Pepper to taste 


  1. Prepare all of your ingredients and set your oven to broil.
  2. Back at the cook top, melt the butter in an oven proof pan (carbon steel is my choice here).  When the butter is starting to brown, add the spinach, mushrooms and onions.  Cook for about 3-5 minutes.
  3. Pour the egg mixture over your spinach and tomato mixture, and allow this to cook for 1-3 minutes until you see the egg is starting to become opaque on the bottom and a firm egg set is taking place.
  4. Sprinkle the mixture with the parmesan cheese and cover.  Turn the heat to low and allow to cook for 3-5 minutes. 
  5. To check for done-ness, take a spatula and lift one of the edges.  The middle should not be jiggly at all.  Flip out of the pan, and serve.
