Shrimp Pomodore

Anything shrimp, all day, any day, every day, every other day.  Does not matter.

Ingredients

  • 8 ounces uncooked thin spaghetti
  • 1 tablespoon olive oil
  • 3/4 pound uncooked shrimp (26-30 per pound), peeled and deveined
  • 2 cloves garlic, minced
  • 1/4 to 1/2 teaspoon crushed red pepper flakes
  • 8 oz  cherry tomatoes, or amount you love
  • 10 fresh basil leaves, torn
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Bring a pot of water to boil, add 1/2 tbsp salt - when boiling, add spaghetti.
  2. In a skillet, add some olive oil, and the shrimp, on medium high.  Season with salt and pepper and garlic, and cook for about 4-5 minutes.  Add the garlic, and pepper flakes, and good a few minutes longer. 
  3. Add the cherry or diced tomatoes and cook until the tomatoes begin to collapse.    Turn the heat off, then add the torn basil, and some of the parm.  Plate and serve with more parmesan cheese.
