Pork Medallions with Dilled Saurkraut and Roasted Baby Potatoes

If you shop at Costco, you have probably seen these little pork medallions.  I don't know what they season them with but wow...they are fragrant.  When I need easy...  Also trying to add more fermented foods into my diet and came across a brand called Wild Brine.  It is soo good!

PORK MEDALLIONS

Servings:  2-3 per person


Ingredients

  • Costco Pork Medallions
  • Wild Brine Dill Saurkraut
  • Roasted Baby Potatoes

Instructions

  1. Preheat the oven to 400.  Wash and slice your potatoes in half, season with salt and pepper, toss in some oil, place on a parchment lined baking sheet.
  2. In a medium skillet over medium heat, drizzle some olive oil and wait until the pan is completely heated, then place the medallions, cook for 3-4 minutes each side until internal temp is 145 (i go 155).  
  3. The saurkraut is served without heating, so just put some in a dish and allow it to come to room temperature before plating.
