Shrimp Cooked in Garlic Butter

Ingredients

  • 1 lb. shrimp, peeled and deveined.
  • 3 cloves garlic, minced.
  • 3 tbsp unsalted butter, divided 1.5 tbsp each
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1/8 tsp cayenne pepper
  • 1 tbsp parsley, minced
  • 1 tbsp lemon juice, either fresh squeezed or liquid
  • salt and pepper to taste (usually 1/2 tsp each)
  • optional: 1/2 tsp crushed red pepper flakes

Instructions

  1. Clean and devein the shrimp, and pat dry, set aside. Mix together in a small prep dish, the salt, pepper, cayenne.
  2. In other small prep dish, mix together the honey, olive oil, and lemon juice.
  3. Set aside.
  4. Place 1.5 tbsp of butter into a cast iron or other heavy bottomed pan over medium heat. Melt completely and let butter start to foam and turn brown.
  5. Add the shrimp, making sure all of the pieces are flat against the bottom.
  6. Turn heat to medium high.
  7. (Shrimp will cool the pan a bit, so this keeps it at a searing temperature.)
  8. Sprinkle the seasoning mix over the top and allow the shrimp to cook undisturbed for about 3 minutes until there is a nice crust on the bottom.
  9. Flip and cook for another 2 minutes.
  10. Stir in the honey, olive oil and lemon juice and add the remaining 1.5 tbsp of butter to the pan and stir everything together for an additional minute.
  11. Sprinkle your parsley over the top, and stir.
  12. Check for seasonings and adjust if necessary.
  13. Serve with angel hair pasta or your favorite.  Spoon additional liquid from the cooking over the top and dig in!
