Pesto Rice

For when you defrosted too much pesto, and you have had Mexican rice a bazillion times, shake it up by adding some pesto to freshly cooked rice.

  • 1 cup basmati rice
  • 1 tbsp butter
  • 2 cups water
  • 1/2 cup cherry tomatoes
  • 2 tsp salt
  • 1/3 cup prepared pesto


  1. Cook rice according to the directions, but add the cherry tomatoes into the boiling water, this allows them cook and break down a bit.
  2. When the rice is finished, add the 1/3 cup prepared pesto and stir to combine. 
  3. Serve with your favorite Italian flavored chicken and one of my favorite vegetables, sauteed zucchini.
