Pesto

Ingredients
- 1 cup basmati rice
- 1 tbsp butter
- 2 cups water
- 1/2 cup cherry tomatoes
- 2 tsp salt
- 1/3 cup prepared pesto
Instructions
- Cook rice according to the directions, but add the cherry tomatoes into the boiling water, this allows them cook and break down a bit.
- When the rice is finished, add the 1/3 cup prepared pesto and stir to combine.
- Serve with your favorite Italian flavored chicken and one of my favorite vegetables, sauteed zucchini.

Notes:
For when you defrosted too much pesto, and you have had Mexican rice a bazillion times, shake it up by adding some pesto to freshly cooked rice.
