Steak Meatballs
Servings: 4
Prep time: 15
Cook time: 20
Ingredients
- 1 ground beef, I use 90/10
- 1/4 to 1/3 cup breadcrumbs
- 1 egg
- 1 tbsp Worcestershire sauce
- salt and pepper
- 1 onion, chopped fine
- 1/2 carton of baby bella mushrooms, sliced
- 1 cup beef broth
- 2 tbsp cornstarch
Instructions
- In a bowl, mix the ground beef with the egg, breadcrumbs, and Worcestershire sauce. *if you like the taste of meatloaf - you can add a squirt of ketchup.
- Saute in a small amount of olive oil, until completely browned and cooked through.
- Add the onions and mushrooms, and continue to cook for about 5 minutes until the onions have softened.
- Sprinkle the cornstarch over everything - stir around for about 1 minutes, then add the beef broth, turn the heat down and simmer for 10 minutes.
- Adjust your salt and pepper seasonings to taste and serve over mashed potatoes, rice, or noodles, along with a green veggie and you're all set.

Notes:
Most of the time, I am looking at comfort food for dinner, and ground beef and mushrooms top that list in a lot of thoughts. Rather than eat a huge portion of beef - I can break it into smaller pieces, so why not meatballs?
