Salisbury Steak Meatballs

Salisbury Steak Meatballs

Most of the time, I am looking at comfort food for dinner, and ground beef and mushrooms top that list in a lot of thoughts. Rather than eat a huge portion of beef - I can break it into smaller pieces, so why not meatballs?
Prep time: 15 MinCook time: 20 MinTotal time: 35 Min

Ingredients

  • For Meatballs:
  • 1 ground beef, I use 90/10
  • 1/4 to 1/3 cup breadcrumbs
  • 1 egg
  • 1 tbsp Worcestershire sauce
  • salt and pepper
  • 1 onion, chopped fine
  • 1/2 carton of baby bella mushrooms, sliced
  • 1 cup beef broth
  • 2 tbsp cornstarch

Instructions

  1. In a bowl, mix the ground beef with the egg, breadcrumbs, and Worcestershire sauce.  *if you like the taste of meatloaf - you can add a squirt of ketchup.
  2. Saute in a small amount of olive oil, until completely browned and cooked through.
  3. Add the onions and mushrooms, and continue to cook for about 5 minutes until the onions have softened.
  4. Sprinkle the cornstarch over everything - stir around for about 1 minutes, then add the beef broth, turn the heat down and simmer for 10 minutes.
  5. Adjust your salt and pepper seasonings to taste and serve over mashed potatoes, rice, or noodles, along with a green veggie and you're all set.

Beef and Mushrooms - what a combo!  This is similar to SOS which is my absolute all time favorite comfort food - I suppose some cream or milk could be added to this to make it more like that instead of using cream of mushroom soup - but...still, just as good.

If you are looking to cut fat out a small amount (I cannot digest fats at all) use the leaner beef.   I usually actually freeze half of this recipe so I have some meatballs on hand - for those nights due to this damn covid thing - i simply cannot stand to cook one more night!  We have never been a heavy restaurant eating family - and have not done so in 9 months now.  We have gotten food to go - but we are usually sorry that we did cause it's just not that good.
