Salisbury Steak Meatballs and Broccoli

Most of the time, I am looking at comfort food for dinner, and ground beef and mushrooms top that list in a lot of thoughts. Rather than eat a huge portion of beef - I can break it into smaller pieces, so why not meatballs?

Salisbury Steak Meatballs

Servings:  4

Prep time: 15

Cook time: 20

Ingredients

  • For Meatballs:
  • 1 ground beef, I use 90/10
  • 1/4 to 1/3 cup breadcrumbs
  • 1 egg
  • 1 tbsp Worcestershire sauce
  • salt and pepper
  • 1 onion, chopped fine
  • 1/2 carton of baby bella mushrooms, sliced
  • 1 cup beef broth
  • 2 tbsp cornstarch

Instructions

  1. In a bowl, mix the ground beef with the egg, breadcrumbs, and Worcestershire sauce.  *if you like the taste of meatloaf - you can add a squirt of ketchup.
  2. Saute in a small amount of olive oil, until completely browned and cooked through. 
  3. Add the onions and mushrooms, and continue to cook for about 5 minutes until the onions have softened. 
  4. Sprinkle the cornstarch over everything - stir around for about 1 minutes, then add the beef broth, turn the heat down and simmer for 10 minutes.
  5. Adjust your salt and pepper seasonings to taste and serve over mashed potatoes, rice, or noodles, along with a green veggie and you're all set.
