Chicken and Sausage Gumbo

This is from Half Baked Harvest Super Simple Book - to get the complete recipe, you can purchase it on Amazon.  I can say this was absolutely delicious and I would make this over and over and over.  It gives you that gumbo feel and taste without making a roux.

Chicken and Sausage Gumbo

1/3 cup oil

3/4 cup AP flour

3 peppers (your choice of color), diced

2 stalks celery, diced

4 cloves garlic, minced

1 medium yellow onion, diced

1 14 oz can fire roasted tomatoes

1 tbsp dried oregano

1 tbsp dried thyme

1 tbsp dried basil

1 tbsp creole seasonings

1 tsp chili powder

1 tsp cayenne pepper *optional

6 cups chicken broth

3 andouille sausage links, diced or sliced

3 boneless skinless chicken thighs


Cooked Rice and Sliced Green Onions for Garnish
