Shrimp Scampi with Fettuccini

Ingredients
- 1 lb. raw shrimp, peeled, cleaned, deveined
- 3 tbsp melted butter x 2 (for a total of 6)
- 1/4 cup lemon juice
- 4 cloves garlic, minced
- 2 tbsp fresh parsley
- 1/3 cup panko bread crumbs
- 1/4 cup parmesan cheese
- Garnish with fresh parsley and a squeeze of lemon if that's your thing
Instructions
- Bring a pot of water to a very hot state but not boiling, put a lid slightly off to keep the water hot, but not quite boiling.
- Preheat your oven to 425.
- Arrange the shrimp on a parchment lined sheet pan. Melt half of the butter, whisk in the lemon juice, garlic, and parsley. Pour this mixture over the shrimp and with your hands, gently mix everything together. Arrange the shrimp in a single layer. Make the breadcrumbs.
- Making the breadcrumbs - by combining the last 3 tbsp of melted butter, panko and parmesan and mix well. Spread the breadcrumbs over the shrimp and pop into the oven for 15 minutes. If you need to brown it up, use the broiler but watch constantly.
- Garnish with a sprinkle of cheese and a pinch of breadcrumbs.

Notes:
You can never go wrong with shrimp for dinner. I have been in complete heaven since I took a chance and ordered shrimp online from Biloxi Shrimp - they are legit and the shrimp is excellent!
