Fried
Yellow Squash

Ingredients
- 1 large size yellow squash
- 1/4 cup buttermilk
- 1 egg
- 1/4 cup ap flour
- 1/4 cup yellow cornmeal
- 1/4 tsp salt and pepper
- 1 cup peanut oil for frying
Instructions
- Slice the squash into slightly larger than 1/4 inches slices.
- Mix the flour and cornmeal together and the salt and pepper, and then mix the egg and the buttermilk.
- Begin heating your oil to medium high. Dip the squash into the buttermilk, then the cornmeal mixture and lay out on a paper towel lined baking sheet.
- Fry 2-3 pieces of squash at a time so you don't cool the pan off - and enjoy every single crunchy bite of that squash goodness.

Notes:
A true southern delicacy. Nothing better than fried yellow squash, especially when you walk inside from the garden with a fresh picked squash. (and the tomato in the photo).
