Fried Yellow Squash

 

 

Yield: 6 slices each

Ingredients

 

  • 1 large size yellow squash
  • 1/4 cup buttermilk
  • 1 egg
  • 1/4 cup ap flour
  • 1/4 cup yellow cornmeal
  • 1/4 tsp salt and pepper
  • 1 cup peanut oil for frying

 

 

Instructions

 

  1. Slice the squash into slightly larger than 1/4 inches slices. 
  2. Mix the flour and cornmeal together and the salt and pepper, and then mix the egg and the buttermilk.
  3. Begin heating your oil to medium high.  Dip the squash into the buttermilk, then the cornmeal mixture and lay out on a paper towel lined baking sheet.
  4. Fry 2-3 pieces of squash at a time so you don't cool the pan off - and enjoy every single crunchy bite of that squash goodness.

Notes:

 

A true southern delicacy.  Nothing better than fried yellow squash, especially when you walk inside from the garden with a fresh picked squash.  (and the tomato in the photo).
