This is good, and I was happy to have finally used some discard.

Sourdough Banana Bread

Ingredients

8 tbsp unsalted butter, room temperature

2/3 cup light or dark brown sugar, packed

1 tsp vanilla extract

1 tsp cinnamon

1 tsp baking soda

1 tsp baking powder

1 tsp salt

1-3/4 cups mashed ripe bananas

1/4 cup honey

2 large eggs

2 cups ap flour

1/2 cup unfed/discard sourdough starter

3/4 cup chopped pecans

 

Instructions

Preheat the oven to 325, and lightly grease a 9x5 loaf pan.

 

In a large bowl, combine the butter, sugar, vanilla, cinnamon, nutmeg, baking soda, baking powder, and salt, beating until smooth.  Add the mashed bananas, honey, eggs, and sourdough starter, again beating until smooth.   Add the flour then the nuts, stirring just until smooth. 

 

 

Bake for 45 minutes, then tent with a piece of foil, and bake for another 25 minutes, until a knife inserted comes out clean.  Continue with 5 minute baking times until that happens.

 

Allow to cool in the pan for 10 minutes, then remove to a rack to cool completely.
